Champagne is matured today in 2000-year-old cellars originally formed by Romans mining chalk--and their chisel marks can still be seen. The city of Reims, built over these cellars, has been destroyed multiple times by successive wars. The cathedral, which saw coronations of twenty-five French kings, was shelled in the First World War. This colorful site tells the history of the region with pictures and maps. This is a super site, marred only by some sloppy editing and repetition of old saws--such as the myth that placing a silver spoon in an opened bottle keeps the wine sparkling.
