WHAT GOES WITH VENISON?

The Wine Cellar is a nifty part of the larger "Chef Talk" site, "a food lover's link to professional chefs." On the Wine Cellar page, those professional chefs recommend favorite wines. There's quite a variety in the wines they review--a recent page featured Chardonnays, Cabernets, and dessert wines--and the commentary tends to be on the terse side. These chefs don't give a lot of detail about where the wine comes from, the type of cask it's stored in, yada yada yada. As you might expect, though, they DO make recommendations for food/wine pairings. And some of those recommendations can be unusual, like "great with venison."
