If you're seriously into fishing, you might want to consider a vacation in South Florida. One of the best places for you may be the Flamingo Lodge Marina & Outpost Resort in the Everglades. You'll find lots of information about the lodge at their website, but more importantly, you'll find good information about fishing. They don't mention it on their website, but if you contact them, ask them about their houseboat vacations. Pontoon houseboats can be rented between October and April, and if you rent for a week, the 7th night is free!
