What can two cups of veggies a day do for your health? According to OnHealth.com, researchers at the University of Washington have found that men whose diets were high in vegetables, especially cruciferous types such as broccoli and cauliflower, had less risk of developing prostate cancer. The research team compared 628 men who were recently diagnosed with prostate cancer with 602 men who did not have cancer. All the men were aged 40 to 64. The study found that 28 or more servings of vegetables a week reduced the risk of prostate cancer by 35 percent, compared to men whose diets included only 14 veggie servings per week. What's a "serving"? About a half-cup. Experts recommend 3-4 servings per day, the equivalent of a side salad at lunch and a veggie at dinner.
